摘要:
陶器是人类烹饪、盛放和贮藏食物的一种主要工具。残留于陶器内部、源自动植物油脂降解而形成的脂肪酸,反映了其最初的食物来源。故此,陶器脂肪酸分析成为国际生物考古界用于探索先民古食谱的主要研究方法之一。近些年来,我国学者虽已开始重视此研究领域并相继开展了一些研究,但总体上学界仍缺乏对陶器脂肪酸分析的研究方法、分析原理以及研究进展的系统介绍,尤其是在脂肪酸污染的判别上几乎无任何阐述。为此,本文阐述了脂肪酸分析的相关概念、分析原理和工作流程,着重介绍了判别脂肪酸污染的分析方法,在简要梳理脂肪酸分析的国内外发展史基础上,详细阐述了脂肪酸分析的一些重要研究进展(新分析技术和新研究方法、奶的起源与传播、生存环境和文化传统对先民生存策略的影响、作为食器的陶器之功能等),并指出了当前研究的一些不足并对如何开展后续研究进行展望。
